The mill, it is the heart of the family farm in Forssa, in Sävsjö municipality. On the farm, there has been a mill since the 1600s, but the mill that stands on the farm today was built in 1938.
Among those who built it was Claes Rostedt's grandfather. Since 2005, it has been he himself who runs Forssa mill farm together with his wife Therese Rostedt. When they took over, the mill was in usable condition, and the miller who had worked here taught them how to use it.
– We wanted to preserve the cultural environment that has existed here. There are not many small mills in operation. That’s how it started, says Therese.
Since then, the couple, who chose to invest in heritage grains, have noticed that more people have become aware of the older grain varieties. It is not just the nutritional content and taste that attract.
– Studies have shown that older varieties have stronger root systems and fare better, which has made some farmers reconsider. It is a bit of a mission for us as well to talk about it and get the message out, says Claes.

What started as the sale of flour grew. On the farm, markets have been established, where more producers have come and sold their various products. Then came the idea of starting a craft bakery and baking with the flour they milled themselves. The couple decided to expand and open a new building for café guests and groups who want to come and bake sourdough pizza on-site. The idea has always been to create a meeting place in the unique mill environment.
– In the past, it was actually at the mill that farmers met and exchanged both experiences and gossip. It was a meeting place even then, says Claes.

Forssa mill farm received micro-support to be able to take baking courses and make study visits to other sourdough bakeries. This has provided more knowledge about heritage grains and sourdough baking to the staff. They have also chosen to learn more about ice cream production to further develop the business.
– You can get a lot for that small amount, says Therese.

To the mill and the beautiful environment, visitors find themselves, who are also met by summer workers who have been hired. The mill itself has been classified as an industrial heritage site.
– For us, it is of course a confirmation that this is worth preserving, says Claes.
